Been Beaned

Beans are great! Delicious, cheapicious, nutritious, easitious! They are definitely more than just something to toot about.

We’ve been using pinto beans in our meals for umteen years now. Whenever I hear of people saying they spend too much on food, I think, you haven’t been buying the mighty pinto bean.

Years ago Carl grew them in our garden. He would then let them dry and then whack them to get the beans out of the shells. We also made tortillas from scratch… well, flour. We enjoyed many fulfilling meals of beans, tortillas and salsa.

Then life got busier and busier. We started buying Rosarita canned beans. Again, years past.

Now we have a 3 quart crock pot we got for around 20 dollars. I hope you are taking notes because I’m coming over to check. We get a 25 pound bag of pinto beans at Costco for 15.80 dollars. That’s 75 cups of beans in a bag. I soak 3 cups in water over night and the crock pot cooks them during the day. That’s a few days of meals. I think it comes to 40 cents a person for three days. (There are 4 of us- 1.60 a pound and there are 3 cups of beans in a pound). I’ll have to have Luke check the math.
You can have them plain or make chili, Boston baked beans, a hat (just seeing if you were listening) and such. So…that’s my story about the power of the bean. Bon appetit!

I really enjoyed this post and chuckled a few times. You’ve inspired me to give some bean recipes a try and maybe cut down on the meat a little.
